Banana pancakes - sweet yet healthy breakfast no child will refuse.

With breakfast being the most important meal of the day, our children would try any trick to skip it. Thanks to my friend Susheel, who introduced me to banana pancakes and always shares the easiest, yet best recipes to try out for my little girl - who some of you already know, is a fussy eater. And didn't she love it! She shoved half the pancake in her mouth and asked for more before she was even finished! I've customised the original recipe that I've came across on the BBC website.
 
What you'll need:
+ 1 large banana +
+ 2 eggs +
+ half a teaspoon of honey +
+ few drops of vanilla extract +
+ oil for frying, I've used a blend of coconut and sunflower +
     
  
How to make them?
Add banana, eggs, vanilla extract and honey to the blender, and turn it on for 15secs. If you do not have a blender you can beat the eggs along with the honey and vanilla extract and mash up banana with fork until it resembles a thick puree. Sprinkle or brush a non-sticky pan with oil and heat up over a medium heat. Pour or spoon a pancake into the pan and fry 1-2 mins on each side. Repeat the process with remaining pancake mix. I've got 6 small pancakes out of 1 banana and 2 eggs. Place them on the plate and serve with jam, chocolate spread, nuts or fruit of your choice.
