15 minutes vegetarian tomato one pot.

My obsession for one pots is getting out of control, mainly because they quick to make and easy to consume. This specific one was an improvised attempt of making something delicious and filling - out of what we already had in the fridge and cupboard at the time. I would be lying if I said it didn't taste amazing, and it will definitely be a regular dish in our house.

Ingredients:
+ half a white onion +
+ 3 medium potatoes +
+ 5-6 large mushrooms +
+ 1 tin of butter beans +
+ half a tin of kidney beans +
+ 3 small tomatoes +
+ salt & pepper +
+ 1 tsp of vegetable oil +
+ 5 bay leaves +
+ half a tea spoon of dried oregano +
+ half a tea spoon of dried basil +
+ 2 table spoons of frozen mixed peppers +
+ water +
+ fresh parsley +
+ 3 table spoons of tomato paste/puree +
  
  
In a medium pot heat up oil. Chop onions into cubes. Transfer into pot add washed and chopped mushrooms, fry for 10 mins on medium heat, stirring occasionally. Peel, wash and chop potatoes into small cubes and add to the pot along with butter beans, kidney beans, peppers, bay leaves. Add salt and pepper to taste, oregano and basil. Pour in a cup of water, bring to boil, cover and simmer for 10minutes until potatoes are nice and soft. Add more water if needed. Stir in tomato paste and chopped tomatoes. Cover for additional 2 minutes. Serve with a dash of fresh parsley or cress and some bread or toast on the side.
